Varieties and classes of pistachios

The pistachio size unit is the number of nuts in an ounce
(28.35 gram = 1 ounce = Oz.)

Iranian pistachios have different shapes and sizes, the main classes being the following:

  1. - round type "Fandoghi", available in sizes: 26/28, 28/30 and 30/32
  2. - long type "Badami", available in sizes: 24/26, 26/28 and 28/30
  3. - long type "Ahmad Aghaie", available in sizes: 22/24 and 24/26
  4. - long type "Akbari", available in sizes: 18/20, 20/22 and 22/24
  5. - JUMBO type "Kalleghuchi", available in sizes: 18/20, 20/22, 22/24 and 24/26

The share of the round type in the crop is the largest every year. Individual shares of types differ from year to year.

American pistachios - the total number of sizes is 5:

  1. - Colossal – less than 18 kernels in an ounce
  2. - Extra Large – 18/20
  3. - Large 21/ 25
  4. - Medium – 26/30
  5. - Small – more than 30 kernels in an ounce

Varieties and classes of kernels

Pistachio kernels, especially types of pistachios having a greener colour are part of every year’s crop, the best of all being green peeled pistachio kernels (GPPK). The demand for these is the greatest.

Classes of kernels:

  1. peeled natural pistachio kernels
    - AAA: 95% of whole ones + 5% of halves
    - AA: 90% of whole ones + 10% of halves
    - A: 85% of whole ones + 15% of halves
    - C: 70% of whole ones + 30% of halves
  2. blanched pistachio kernels (green peeled pistachio kernels = GPPK)
    - SG = excellent green (dark colour) 95% of whole unified, large size
    - G1 = green 1 (very green colour), 95% of whole ones, mixture of sizes
    - G2 = green 2 (green colour) 90% of whole ones, mixture of sizes
    - GY = yellow-green (light green colour s) 90% of whole ones, mixture of sizes
    - GS = green pistachio kernels divided in two halves, mixture of sizes
    - GD = crushed (granulated) kernels
    - GP = powder
