Coconuts are processed to make coconut flour which is then dried at high temperatures. The partially cooled flour is sieved through various large sieves and stored in special boxes resulting in the final product – desiccated coconut. It is then divided according to size into several quality grades, the main ones being fine, medium and coarse. Desiccated coconut contains approximately 60 % coconut oil and is used to a large extent by confectionaries, in the baking industry, and also in other branches of the food processing industry.
